The winemaker Jaime Suarez trained in France and Australia has launched his own wine. He calls his project a garage wine and what a garage, only 3445 bottles were released in 2006 and 4605 in 2007.
The 90 years old vines were pruned back during 2 years to find the ideal balance. At harvest time the bunches were hand-destemmed and placed berry by berry into a new barrique of 100% french oak to ferment (method integral).
The hard work is rewarding as the wine comes out with a polished tannin structure whilst preserving the racé of Toro.
